- Preheat your oven to 350°F (175°C). Spray a muffin tin with cooking spray to prevent sticking.
- Cut each slice of ham in half and line each muffin cup with a ham half to create a cup shape.
- In a bowl, whisk together 12 large eggs, kosher salt, and black pepper until smooth.
- Pour the egg mixture evenly into each ham-lined muffin cup, filling them about three-quarters full.
- Sprinkle shredded cheddar cheese on top of each cup.
- Bake for 15–20 minutes until eggs are set and tops are golden. Let cool before removing from the tin.
- Serve warm, garnished with parsley if desired.
