- Heat 2 tablespoons of olive oil in a large skillet over medium heat for 1-2 minutes until shimmering.
- Add 1 chopped onion and 2 minced garlic cloves, cooking for 2-3 minutes until translucent.
- Add 2 diced potatoes and 1 diced bell pepper, stirring occasionally for about 10 minutes until the potatoes soften and turn golden.
