  • 1 medium Onion Chopped, yellow or white works well.
  • 1 medium Bell Pepper Diced, can swap with zucchini or carrots.
For Seasoning
  • 2 tablespoons Olive Oil Can substitute with avocado oil.
  • Salt and Pepper To taste.
  • 1 teaspoon Smoked Paprika Can use regular paprika or chili powder.
  • 1 teaspoon Dried Thyme Can substitute with Italian seasoning or fresh thyme.
  • Red Chili Flakes Optional, adjust to spice preference.
For Garnish
  • 2 tablespoons Fresh Parsley Chopped, can replace with cilantro for different flavor.

Method
 

Step-by-Step Instructions
  1. Heat 2 tablespoons of olive oil in a large skillet over medium heat for 1-2 minutes until shimmering.
  2. Add 1 chopped onion and 2 minced garlic cloves, cooking for 2-3 minutes until translucent.
  3. Add 2 diced potatoes and 1 diced bell pepper, stirring occasionally for about 10 minutes until the potatoes soften and turn golden.
  4. Push veggies aside and add 1 pound of ground turkey, cooking for 5-7 minutes until browned.
  5. Sprinkle in 1 teaspoon of smoked paprika, 1 teaspoon of dried thyme, along with salt, pepper, and optional red chili flakes. Mix well and cook for an additional 5 minutes.
  6. Continue cooking for another 5-7 minutes until potatoes are tender. Stir occasionally.
  7. Remove from heat and garnish with freshly chopped parsley before serving.
