Step-by-Step Instructions

  2. In a large deep skillet, heat olive oil over medium-high heat. Add ground turkey and sauté for about 5-7 minutes until browned.
  3. Add diced onions and minced garlic to the skillet. Stir frequently for 3-4 minutes until onions are translucent.
  4. Stir in dried Italian seasoning, canned diced tomatoes, salt, and pepper. Mix to enhance the filling's flavor.
  5. Mix in cooked long-grain rice and chopped parsley. Fold in half of the shredded mozzarella cheese.
  6. Slice bell peppers in half lengthwise and remove seeds. Salt and oil the insides.
  7. Stuff each pepper half with the turkey and rice filling. Arrange in a baking dish and cover with aluminum foil.
  8. Bake for about 30-35 minutes. Remove foil and sprinkle remaining cheeses on top.
  9. Return to the oven and bake uncovered for an additional 10-12 minutes until cheese is melted.
