  • 8 Tortillas corn or flour
For the Sauce and Topping
  • 2 cups Enchilada Sauce store-bought or homemade
  • 1 cup Shredded Cheese Cheddar, Monterey Jack, or Mexican blend

Step-by-Step Instructions
  1. Preheat your oven to 375°F (190°C).
  2. In a large skillet over medium heat, add the ground beef and diced onions. Sauté for 5-7 minutes until browned.
  3. Stir in the minced garlic, cumin, and chili powder. Cook for 1 minute until fragrant.
  4. Lay out your tortillas and spoon the beef mixture into each. Roll each tortilla tightly and place seam-side down in a greased baking dish.
  5. Pour the enchilada sauce over the rolled tortillas. Sprinkle shredded cheese on top.
  6. Bake uncovered for 20-25 minutes until the cheese is bubbly and golden brown.
  7. Let them sit for a few minutes before serving. Garnish with fresh cilantro or sliced jalapeños, if desired.
