  • 1 cup Beef Broth Opt for low-sodium broth.
  • 1 tablespoon Olive Oil Can be replaced with vegetable oil.
  • 1 medium Onion Diced yellow onion is common.
  • 2 cloves Garlic Minced; use fresh for best flavor.
  • 2 teaspoons Italian Seasoning Mix your own if desired.

  • 1/2 cup Parmesan Cheese Use dairy-free alternatives if needed.
Optional Variations
  • 1 cup Vegetables Bell peppers, zucchini, or spinach can be added.

Instructions
  1. Heat 1 tablespoon of olive oil in a large skillet over medium heat until it shimmers, about 2 minutes.
  2. Add 1 diced yellow onion to the skillet and sauté for 3-4 minutes until soft and translucent.
  3. Stir in 2 minced garlic cloves and cook for an additional minute.
  4. Add 1 can of diced tomatoes, 1 cup of beef broth, 1 cup of orzo, and 2 teaspoons of Italian seasoning. Season with salt and black pepper to taste.
  5. Increase the heat and bring the mixture to a boil, which should take about 2-3 minutes.
  6. Reduce heat to low, cover the skillet and let simmer for 20-25 minutes, stirring occasionally.
  7. If the mixture thickens too much, add a splash of beef broth or water to adjust consistency.
  8. Remove from heat and sprinkle freshly grated Parmesan cheese on top before serving.
