- Heat 1 tablespoon of olive oil in a large skillet over medium heat until it shimmers, about 2 minutes.
- Add 1 diced yellow onion to the skillet and sauté for 3-4 minutes until soft and translucent.
- Stir in 2 minced garlic cloves and cook for an additional minute.
- Add 1 can of diced tomatoes, 1 cup of beef broth, 1 cup of orzo, and 2 teaspoons of Italian seasoning. Season with salt and black pepper to taste.
- Increase the heat and bring the mixture to a boil, which should take about 2-3 minutes.
- Reduce heat to low, cover the skillet and let simmer for 20-25 minutes, stirring occasionally.
- If the mixture thickens too much, add a splash of beef broth or water to adjust consistency.
