Step-by-Step Instructions for Creole Jambalaya
  1. Preheat your oven to 350°F (175°C).
  2. Melt 1 tablespoon of unsalted butter over medium-high heat and brown the Andouille sausage for 7-9 minutes.
  3. Add remaining butter, diced celery, green bell pepper, and yellow onion. Sauté for 6-7 minutes until soft.
  4. Stir in minced garlic, then add salt, pepper, thyme, oregano, paprika, and cayenne pepper. Cook for 1 minute.
  5. Mix in rice and tomato paste, sauté for 3 minutes to toast.
  6. Pour in chicken broth and whole tomatoes, bring to a boil.
  7. Stir in shrimp and half of the scallions, cover, and bake for 30 minutes.
  8. Let sit covered for 5 minutes before serving and garnish with remaining scallions.
