Method
 

Preparation
  1. Cook the pasta: Bring salted water to a boil, add rotini, and cook until al dente, about 8-10 minutes. Drain and cool.
  2. Rinse the pasta: Rinse under cold water for a minute to maintain shape and texture.
  3. Prepare the dressing: Whisk together mayonnaise, sour cream, chipotle peppers, lime juice, garlic powder, salt, pepper, and cumin until smooth.
  4. Combine pasta and dressing: Add cooled rotini to the dressing, stirring gently until well coated.
  5. Fold in the vegetables: Add diced red onion, rinsed black beans, corn, and tomatoes, mixing delicately.
  6. Mix in the chicken: Gently fold in cooked chicken, ensuring even distribution.
  7. Add avocado and cilantro: Fold in diced avocado and garnish with cilantro just before serving.
