  • 2 tablespoons Vinegar Cane or coconut vinegar is traditional.
  • 1/2 cup Unsweetened Pineapple Juice Can replace with water if needed.
  • 1 teaspoon Red Food Color Optional, for enhanced appearance.
For Cooking
  • 1 pound Skinless Chicken Thigh Fillet Main ingredient providing protein.
  • 1 cup Water Used for cooking to tenderize the chicken.
  • 2 tablespoons Oil For frying.

Preparation Steps
  1. In a large mixing bowl, combine dark brown sugar, finely ground white pepper, rice flour, salt, minced garlic, soy sauce, vinegar, unsweetened pineapple juice, and red food color if desired. Whisk together until smooth to create a marinade.
  2. Add the skinless chicken thigh fillet to the marinade, making sure each piece is coated. Massage it for better flavor absorption, cover, and refrigerate for at least one hour.
  3. Remove the chicken from the fridge, place it in a skillet, pour in 1 cup of water, and turn the heat to medium-high. Simmer uncovered for about 15-20 minutes, stirring occasionally until the liquid reduces.
  4. Once water has mostly evaporated, add oil to the skillet, increase heat, and sear the chicken for another 5-10 minutes until lightly charred.
  5. Transfer the Chicken Tocino to a serving plate and serve with garlic fried rice and spiced vinegar dip.
