  • 8 ounces Rotini or Penne Pasta or any preferred pasta shape

  • 2 cups Cooked Chicken Breasts grilled or pan-seared; rotisserie chicken is a great shortcut
For the Greens
  • 4 cups Romaine Lettuce washed and chopped into bite-sized pieces
For the Dressing
  • 1 cup Caesar Dressing store-bought or homemade
For the Crunch
  • 1 cup Croutons keep separate until serving
For the Garnish
  • 1/2 cup Parmesan Cheese can substitute with a dairy-free alternative if desired

Method
 

Preparation Steps
  1. Cook pasta in a large pot of salted boiling water for 8-10 minutes until al dente, then drain and rinse under cold water.
  2. Season chicken breasts with salt, pepper, and olive oil. Cook in a grill pan or skillet over medium-high heat for 6-7 minutes per side until fully cooked. Let rest and slice.
  3. Wash and dry romaine lettuce. Chop into bite-sized pieces.
  4. In a large bowl, mix Caesar dressing ingredients if making homemade, or pour store-bought dressing.
  5. Combine the cooked pasta, sliced chicken, chopped lettuce, croutons, and Parmesan in a serving bowl. Drizzle with dressing and toss until well combined.
  6. Cover and refrigerate for at least 30 minutes before serving to let the flavors meld.
