Step-by-Step Instructions
  1. Prepare Beef: Rinse the beef short ribs under cold water and pat them dry with paper towels.
  2. Make Marinade: Whisk together soy sauce, brown sugar, rice vinegar, hoisin sauce, minced ginger, minced garlic, sesame oil, chili paste, and black pepper until combined.
  3. Marinate Beef: Pour the marinade over the beef short ribs and refrigerate for at least 2 hours, ideally overnight.
  4. Preheat Oven: Preheat your oven to 325°F (160°C).
  5. Sear Beef: In a skillet over medium-high heat, sear the marinated short ribs for about 3-4 minutes on each side.
  6. Transfer to Roasting Pan: Arrange the seared beef short ribs in a roasting pan and pour the remaining marinade over them.
  7. Cover and Roast: Cover the pan tightly with aluminum foil and roast for 3-4 hours until fork-tender.
  8. Caramelize: In the last 30 minutes, remove the foil to allow the beef to caramelize.
  9. Check Tenderness: Check the tenderness by pulling apart with a fork; roast additional 30 minutes if not tender.
  10. Rest and Serve: Let the beef ribs rest for 10-15 minutes, slice, garnish, and serve with sides.
