Step-by-Step Instructions
  1. Slice 2-3 sweet onions thinly and mince 3 cloves of garlic. Gather all ingredients.
  2. Heat 2 tablespoons of olive oil over medium heat in a large skillet. Add sliced onions and stir occasionally for 20 minutes until golden brown.
  3. Add minced garlic and sauté for an additional minute until fragrant.
  4. Deglaze the skillet with a splash of vegetable broth, scraping browned bits. Simmer for 3 minutes.
  5. Boil salted water in a pot and cook the fettuccine according to package instructions, approximately 8-10 minutes.
  6. Drain pasta, reserving 1 cup of water, and combine with the onion mixture, adding reserved pasta water gradually.
  7. Plate the pasta, garnish with grated Parmesan cheese and fresh herbs, serve warm.
