Preparation Steps
- Preheat the oven to 400°F (204°C).
- In a small bowl, whisk together salt, five spice powder, fish sauce, rice wine vinegar, soy sauce, coconut sugar, brandy, and minced garlic until well combined.
- Place the chicken thighs into a Ziploc bag and pour the prepared marinade over the top. Seal the bag and shake gently to coat evenly. Let marinate for at least 15 minutes or refrigerate overnight.
- In a large oven-safe pan over medium-high heat, add a little oil and sear the marinated chicken thighs for about 5 minutes on each side until golden-brown.
- Transfer the pan to the preheated oven and bake for 30-35 minutes or until the internal temperature reaches 165°F (74°C).
- Let the chicken rest for a few minutes, then slice and serve over rice with fresh cucumber slices.
