  • 2 tablespoons Avocado Oil olive oil works too
For the Mac N Cheese
  • 16 ounces Pasta any shape, elbow macaroni preferred
  • 1 tablespoon Kosher Salt for boiling water
  • 2/3 stick Unsalted Butter for the roux
  • 1/3 cup All-Purpose Flour for thickening
  • 3-4 cups Lukewarm Whole Milk half-and-half for creaminess
  • 2 slices Pepper Jack Cheese
  • 8 ounces Shredded Cheese Mixture mix of Gouda, Gruyere, cheddar, mozzarella
  • 1 1/2 cups Reserved Shredded Cheese Mixture for topping

Method
 

Step-by-Step Instructions
  1. Cut the NY strip steaks into 1/4 to 1/2-inch cubes and combine with spices and avocado oil. Refrigerate for 30 minutes.
  2. In a large pot, boil salted water, add pasta, and cook until al dente, about 10-12 minutes. Drain and set aside.
  3. Melt unsalted butter in a medium saucepan, whisk in flour to form a roux, then add milk gradually until thickened. Stir in cheeses until melted.
  4. Add drained pasta to cheese sauce, mix well, and transfer to baking dish. Top with reserved cheese.
  5. Preheat oven to 350°F. Bake for 20-25 minutes or until bubbly and golden. Broil for 5 minutes for extra crispiness.
  6. In a skillet, heat avocado oil and sear marinated steak bites for 3-4 minutes to desired doneness.
  7. Serve baked mac and cheese topped with warm steak bites.
