Method
 

Step-by-Step Instructions
  1. Preheat the oven to 350°F (175°C).
  2. In a medium skillet over medium heat, add the ground beef and cook until browned, about 7-10 minutes.
  3. Stir in the chunky salsa with cooked beef, and add half of the cheese, cooking for another 2-3 minutes until the cheese begins to melt.
  4. Spoon the beef mixture onto each tortilla, rolling them tightly and placing seam-side down into a greased baking dish.
  5. Pour the red enchilada sauce over the rolled tortillas, covering completely. Sprinkle remaining cheese on top.
  6. Cover the baking dish with foil and bake for 20 minutes, then remove foil and bake for an additional 10-15 minutes until cheese is melted and bubbly.
