- Melt 3 tablespoons of butter in a small saucepan over medium-low heat, adding ⅛ teaspoon of red pepper flakes. Let the mixture simmer gently for about 5 minutes.
- Transfer the infused butter to a small bowl and brush one side of each slice of thick white bread generously with the melted butter mixture.
- Place a clean skillet over medium heat to warm up. Lay one slice of bread butter-side down into the skillet.
- Sprinkle 2 ounces of crumbled goat cheese and 2 ounces of shredded white cheddar over the slice of bread. Drizzle 1 tablespoon of liquid honey on top.
- Place the second slice of bread on top of the cheese, ensuring the buttered side faces out. Gently press down.
- Cover the skillet with a lid and cook the sandwich for 5-7 minutes on medium heat, keeping an eye on the bread.
- Once cooked, remove the lid and drizzle the remaining tablespoon of honey over the top. Slice the sandwich in half and serve it warm.
