  • 1 cup uncooked long-grain white rice cooked in broth for flavor
  • 2 cups chicken broth consider low-sodium
  • 1 can French onion soup
  • 1 cup sour cream Greek yogurt can be a healthy alternative
  • 1 medium onion or shallots for a milder effect
  • 1 tablespoon olive oil butter can be used for richness
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • to taste salt
  • to taste pepper
For the Topping
  • 2 cups shredded mozzarella cheese Gruyere offers a flavor twist

Method
 

Step-by-Step Instructions
  1. Preheat the oven to 350°F (175°C).
  2. In a large skillet, heat a tablespoon of olive oil and sauté sliced onions until golden brown, about 10 minutes.
  3. In a large bowl, combine diced chicken, uncooked rice, chicken broth, French onion soup, sour cream, garlic powder, onion powder, salt, and pepper.
  4. Fold in the caramelized onions into the mixture.
  5. Grease a 9x13 inch casserole dish and pour the mixture into it, spreading evenly.
  6. Cover with aluminum foil and bake for 30 minutes.
  7. Remove the foil, sprinkle cheese on top, and bake uncovered for an additional 15 minutes until cheese is bubbling.
  8. Let cool for a few minutes before serving, garnished with parsley if desired.
