- Preheat the oven to 350°F (175°C).
- In a large skillet, heat a tablespoon of olive oil and sauté sliced onions until golden brown, about 10 minutes.
- In a large bowl, combine diced chicken, uncooked rice, chicken broth, French onion soup, sour cream, garlic powder, onion powder, salt, and pepper.
- Fold in the caramelized onions into the mixture.
- Grease a 9x13 inch casserole dish and pour the mixture into it, spreading evenly.
- Cover with aluminum foil and bake for 30 minutes.
- Remove the foil, sprinkle cheese on top, and bake uncovered for an additional 15 minutes until cheese is bubbling.
- Let cool for a few minutes before serving, garnished with parsley if desired.
