  2. Slice the top off a head of garlic, drizzle with olive oil and salt, wrap in foil, and roast for about 50 minutes.
  3. Cook chopped bacon in a skillet over medium heat until crispy, about 6-8 minutes. Drain on paper towels.
  4. In the same skillet, melt butter over medium heat, add shallot, and sauté for 2 minutes until translucent.
  5. Squeeze roasted garlic cloves into the skillet, add chicken broth and heavy cream, season, and simmer for 5-7 minutes.
