- Preheat your oven to 400°F (200°C).
- Slice the fennel bulbs, delicata squash, and shallots into uniform pieces. Core and wedge the apples, then set aside.
- Drizzle olive oil and vinegar over the sliced vegetables and apples, season with salt and pepper, and toss to coat.
- Spread the mixture on a baking sheet and roast for 25-30 minutes, stirring halfway through.
- Remove from the oven and toss with hazelnuts or pepitas and sprinkle with pomegranate seeds and parsley.
