For the Dressing

Method
 

Step-by-Step Instructions
  1. Soak the thinly sliced red onion in a bowl of ice-cold water for about 10 minutes.
  2. Chop the ripe tomatoes into bite-sized pieces and place in a large bowl.
  3. Slice the cucumber thinly and add it to the bowl with the tomatoes.
  4. Add the soaked red onion and torn basil leaves to the bowl with tomatoes and cucumber.
  5. Drizzle with olive oil and balsamic vinegar, sprinkle with salt and pepper.
  6. Gently toss all the ingredients together to combine.
  7. Serve immediately, garnishing with extra basil leaves if desired.
