  • 2 tablespoons Greek Yogurt Adjust to taste.
  • 1 tablespoon Lime Juice Fresh is best.
  • 1 tablespoon Cilantro Optional.
  • 1 teaspoon Smoked Paprika Regular paprika can be used.
  • 1 teaspoon Salt To taste.
  • ½ teaspoon Black Pepper To taste.
Optional
  • Crumbled Feta Cheese Can be omitted for a dairy-free version.

Method
 

Preparation
  1. Cook the chicken by grilling or roasting until it reaches 165°F, about 15-20 minutes.
  2. Prepare the corn: Grill fresh corn for 10-12 minutes or drain canned corn.
  3. Chop the cucumber into small cubes and finely chop the red onion.
  4. Make the dressing by combining mayonnaise, Greek yogurt, lime juice, cilantro, smoked paprika, salt, and black pepper.
  5. Combine the diced chicken, corn, cucumber, and onion with the dressing.
  6. Taste and adjust seasoning. Fold in feta cheese if desired.
  7. Serve immediately or chill for 30 minutes before serving.
