Make the Creamy Dressing
- In a medium bowl, whisk together Greek yogurt, mayonnaise, extra virgin olive oil, red wine vinegar, and lemon juice. Add Parmesan cheese, dried herbs, and seasonings. Mix until smooth and creamy, then refrigerate for at least 30 minutes.
Prepare the Salad Base
- Wash and chop the romaine lettuce. Halve the cherry tomatoes, slice the cucumber, and thinly slice the red onion. Prepare pepperoncini and pit and slice the Kalamata olives. Combine all in a large mixing bowl.
