Creamy Dressing
  • 1 cup Greek Yogurt Full-fat for richness

  • 1/4 cup Extra Virgin Olive Oil High-quality for best flavor
  • 2 tablespoons Red Wine Vinegar Essential for Mediterranean flair
  • 1 large Lemon Juice Freshly squeezed
  • 1/4 cup Parmesan Cheese Finely grated

Method
 

Make the Creamy Dressing
  1. In a medium bowl, whisk together Greek yogurt, mayonnaise, extra virgin olive oil, red wine vinegar, and lemon juice. Add Parmesan cheese, dried herbs, and seasonings. Mix until smooth and creamy, then refrigerate for at least 30 minutes.
Prepare the Salad Base
  1. Wash and chop the romaine lettuce. Halve the cherry tomatoes, slice the cucumber, and thinly slice the red onion. Prepare pepperoncini and pit and slice the Kalamata olives. Combine all in a large mixing bowl.
Assemble the Salad
  1. Add the chopped romaine, cherry tomatoes, cucumber, red onion, pepperoncini, olives, and crumbled feta cheese to the mixing bowl. Toss gently to distribute ingredients.
Add Croutons and Dressing
  1. Just before serving, add garlic herb croutons. Drizzle chilled dressing over the salad and toss again to coat evenly.
