- In a large measuring cup, combine 2 cups of vanilla Greek yogurt, 1/3 cup of your preferred sweetener, 1/4 cup of freshly squeezed lemon juice, and 1 tablespoon of lemon zest. Whisk vigorously until smooth.
- If using an ice cream maker, ensure it's chilled and pour the mixture in. Churn for 20-25 minutes until thick.
- If you don't have an ice cream maker, pour the mixture into ice cube trays and freeze for 4-6 hours until solid.
- Transfer frozen yogurt cubes to a food processor and blend on high for 1-2 minutes until creamy.
- Serve immediately for soft-serve or transfer to an airtight container and freeze for 2-3 hours for firmer texture.
