Ingredients

For the Orzo Dish
  • 2 tablespoons butter Provides richness and flavor; substitute with olive oil for a lighter option.
  • 1 pound shrimp (uncooked, 31-40 count) The main protein source; succulent and quick to cook.
  • 1 cup orzo pasta (uncooked) A fantastic starch base that absorbs flavors.
  • 4-5 cloves garlic (minced) Adds aromatic flavor, essential for achieving that classic scampi taste.
  • 1/4-1/2 teaspoon crushed red pepper flakes Provides gentle heat to the dish; adjust according to your desired spice level.
  • 1/2 cup dry white wine Enhances the sauce with acidity; replace with chicken broth for a non-alcoholic version.
  • 2 cups chicken broth Adds depth to the cooking liquid; vegetable broth can be used for a lighter flavor.
  • 1 tablespoon lemon juice Brightens the dish, enhancing the overall flavor.
  • 1 tablespoon fresh parsley (chopped) Brings a fresh touch for garnish; dried parsley can be a handy substitute.
  • salt & pepper Essential for seasoning to taste.
  • freshly grated parmesan cheese (optional) Adds a rich and flavorful finish when serving; completely optional but highly recommended!

Equipment

  • Dutch oven

Method

Step-by-Step Instructions for Shrimp Scampi Orzo
  1. In a medium-high heat Dutch oven, melt 2 tablespoons of butter until frothy. Add 1 pound of uncooked shrimp, cooking for about 2 minutes on each side until they turn pink and opaque. Once cooked, remove the shrimp from the pot and set aside.
  2. In the same pot, add another tablespoon of butter, followed by 1 cup of uncooked orzo, 4-5 cloves of minced garlic, and ¼ teaspoon of crushed red pepper flakes. Stir this mixture continuously for about 2 minutes.
  3. Pour in ½ cup of dry white wine, allowing it to simmer for about 30 seconds. Then mix in 2 cups of chicken broth, bringing the liquid to a gentle boil while stirring occasionally.
  4. Reduce the heat to medium-low and simmer uncovered for about 12 minutes, stirring often until the orzo is al dente and the liquid is mostly absorbed.
  5. Once the orzo is cooked, stir in the sautéed shrimp, 1 tablespoon of fresh lemon juice, and 1 tablespoon of chopped parsley. Cover and let it sit for 3 minutes off the heat.
  6. Dish out the shrimp scampi orzo immediately, garnishing with freshly grated parmesan cheese if desired.
