Ingredients

For the Beef
  • 1 pound Flank Steak Can substitute with skirt steak or sirloin tip steak.
For the Vegetables
  • 8 ounces Cremini Mushrooms White button mushrooms also work well.
  • 4 stalks Green Onions Chopped for even distribution.
  • 1 medium Onion Sweet onions or shallots can be good alternatives.
For the Sauce
  • 3 tablespoons Soy Sauce Consider using light soy sauce for milder taste.
  • 2 tablespoons Oyster Sauce or Vegetarian Stir-Fry Sauce Swap for vegetarian option if desired.
  • 1 tablespoon Dark Soy Sauce Regular soy sauce can be substituted.
  • 2 tablespoons Shaoxing Wine Use dry sherry or stock if unavailable.
  • 1 teaspoon Sugar Cane sugar can substitute for a less refined choice.
For Cooking
  • 2 tablespoons Vegetable Oil Any neutral oil will do.
  • 1 teaspoon Baking Soda Can be omitted if you have dietary restrictions.
  • 1 tablespoon Cornstarch Tapioca or potato starch can be used instead.
  • 1 cup Chicken Stock Opt for low sodium for better control of saltiness.
  • 2 cloves Garlic Cloves Freshly minced for aromatic depth.
For a Finishing Touch
  • 1 teaspoon Sesame Oil Optional but highly recommended for flavor.

Equipment

  • Large Pan or Wok

Method

Step-by-Step Instructions
  1. Slice the flank steak against the grain into ¼-inch-thick pieces, transfer to a bowl, and add marinade ingredients. Allow to marinate at room temperature for 15-30 minutes.
  2. In a small mixing bowl, combine soy sauce, oyster sauce, dark soy sauce, Shaoxing wine, and sugar. Whisk until sugar dissolves and set aside.
  3. Heat a large pan or wok over medium-high heat, add vegetable oil, and cook marinated beef in a single layer for 4-5 minutes until browned and cooked through.
  4. In the same pan, add more oil if necessary, then toss in sliced onions and cremini mushrooms. Stir-fry for about 2 minutes until softened and onions are translucent.
  5. Pour the prepared sauce into the pan with the sautéed vegetables and simmer for 1-2 minutes until it thickens slightly.
  6. Return the cooked beef to the pan with chopped green onions, toss together for about 30 seconds, and then plate the stir-fry.
