  • 1 cup Fennel Chopped, optional
  • 1 pound Ground Beef Can substitute with turkey or lentils
  • 1 teaspoon Dried Thyme
  • 1 teaspoon Sage
  • 1 teaspoon Marjoram
  • 1 teaspoon Smoked Paprika
  • 1 teaspoon Chili Flakes Adjust to taste
  • 1 cup Beef Broth Can substitute with chicken or vegetable broth
  • 1 leaf Bay Leaf Discard before serving
  • 2 cups Puréed Tomatoes Canned or fresh
  • 2 tablespoons Tomato Paste
For the Whipped Ricotta
  • 1 cup Whipped Ricotta Mix in olive oil and parmesan for extra flavor

Step-by-Step Instructions for Pumpkin Beef Bolognese
  1. In a large saucepan, heat 2 tablespoons of olive oil over medium-low heat. Add chopped shallots and minced garlic, stirring for about 5 minutes until fragrant and translucent.
  2. Incorporate diced pumpkin into the pan, cooking for another 5 minutes until it softens slightly.
  3. Increase the heat to high and add 1 pound of ground beef, breaking it apart while it browns for about 10 minutes.
  4. Stir in dried thyme, sage, marjoram, smoked paprika, chili flakes, salt, and pepper. Cook for 2 more minutes.
  5. Pour in 1 cup of beef broth and add a bay leaf. Stir and bring to a gentle simmer for 10 minutes.
  6. Incorporate 2 cups of puréed tomatoes and 2 tablespoons of tomato paste into the pot. Stir and simmer for another 10 minutes.
  7. Boil salted water and cook pasta according to package instructions until al dente, about 8-10 minutes.
  8. Toss the cooked pasta with the Pumpkin Beef Bolognese sauce, and top with whipped ricotta before serving.
