Step-by-Step Instructions
  1. Wash and peel the two ripe peaches, slice them into wedges, and remove the pits.
  2. Blend the sliced peaches on high for about 30 seconds until smooth.
  3. Strain the blended peach puree through a fine mesh strainer into a bowl or pitcher.
  4. Combine the strained peach puree with lemon juice and honey in a large pitcher.
  5. Gradually pour in the chilled sparkling water and gently stir.
  6. Pour the mocktail into elegant glasses, garnish with mint leaves, and serve immediately.
