- Roll out one sheet of defrosted puff pastry on a floured surface until it measures roughly 1/8-inch thick.
- Spread 1 tablespoon of cream-style horseradish evenly over the pastry, then sprinkle 1 cup of Gruyère cheese, followed by 1/3 cup of caramelized onions, half of the crumbled bacon, and 1/2 teaspoon of fresh thyme.
- Starting from a long edge, carefully roll the pastry towards the center to form a log and seal edges with water. Wrap the log in plastic wrap and refrigerate for at least 1 hour or freeze for 30 minutes.
- Unwrap the pastry roll, place it on a cutting board, and cut it into 1/4-inch thick slices.
- Preheat your oven to 400°F (200°C) and arrange the slices on parchment-lined baking sheets, spacing them 1 inch apart. Bake for 12-15 minutes until golden brown.
- Allow the palmiers to cool for a few minutes before serving them warm alongside cocktails or wine.
