- Pat the whole chicken dry with paper towels and place in a roasting tray, breast-side up.
- Mix together melted butter, olive oil, white wine, kosher salt, black pepper, lemon juice, and minced garlic, and rub the mixture over the chicken.
- Stuff the chicken's cavity with the halved lemon, garlic bulb, and fresh parsley sprigs. Tie the legs together with kitchen twine.
