Step-by-Step Instructions
  1. Preheat your oven to 420°F (220°C).
  2. Pat the whole chicken dry with paper towels and place in a roasting tray, breast-side up.
  3. Mix together melted butter, olive oil, white wine, kosher salt, black pepper, lemon juice, and minced garlic, and rub the mixture over the chicken.
  4. Stuff the chicken's cavity with the halved lemon, garlic bulb, and fresh parsley sprigs. Tie the legs together with kitchen twine.
  5. Roast in the oven for approximately 1 hour and 20 to 30 minutes, basting every 30 minutes until the internal temperature reaches 165°F.
