  • 2 cups Broccoli Florets Can substitute with green beans.

  • 1 medium Lemon Juice for the dish and slices for serving.

Method
 

Preparation
  1. Preheat your oven to 400°F (200°C) and grease a large sheet pan with cooking spray.
  2. Pat the cod fillets dry with paper towels and arrange them on the sheet pan. Season with salt, black pepper, and dried dill. Drizzle half the olive oil over the fillets.
  3. Toss bell peppers and broccoli florets in a bowl with remaining salt, pepper, and olive oil to coat evenly.
  4. Arrange the seasoned vegetables around the cod on the sheet pan, ensuring they are evenly spread out.
  5. Bake in the preheated oven for 16 to 18 minutes until the cod flakes easily with a fork and the vegetables are tender yet crisp.
  6. Remove from the oven and drizzle fresh lemon juice over the dish. Serve immediately with lemon slices on the side.
