Step-by-Step Instructions
  1. Begin by preheating your oven to 350°F (175°C) and line a cookie sheet with parchment paper.
  2. In a large mixing bowl, cream together salted butter, brown sugar, and granulated sugar until light and fluffy.
  3. Crack in the egg and pour in the canola oil; beat on low until well combined.
  4. Gradually add the flour, oats, cornstarch, baking soda, and salt; gently fold until just combined.
  5. Fold in chocolate chips until evenly distributed.
  6. Scoop out 1/3 cup servings of dough, roll into balls, and place on the prepared sheet, flattening slightly.
  7. Bake for 11-13 minutes, until edges are golden and centers are soft.
  8. Cool on the pan for a few minutes, then transfer to a wire rack and spread cookie butter on top.
