Prepare the Cheesecakes
- In a mixing bowl, combine crushed vanilla wafers and melted butter, stirring until evenly coated. Press this mixture firmly into the bottom of a lined muffin tin.
- In a large bowl, beat softened cream cheese until smooth and fluffy. Gradually add sweetened condensed milk, mashed bananas, and vanilla extract, mixing to combine. Fold in the whipped topping gently.
- Evenly distribute banana slices on top of each crust. Fill each cup with the cheesecake mixture, smoothing the tops.
- Cover the muffin tin with plastic wrap and refrigerate for 1-2 hours or freeze for 30 minutes until firm.
- Remove the cheesecakes from the muffin tin and top with extra whipped topping and mini vanilla wafers. Add banana slices just before serving.
