- In a large mixing bowl, combine the vanilla whey protein powder, rolled oats, poppy seeds, Truvia, and fresh lemon zest. Stir well.
- Pour in the lemon juice and mix. Gradually add cold water until the mixture forms a sticky dough.
- If the mixture is too dry, add more water one tablespoon at a time until the right consistency is achieved.
- Dampen your hands with cool water and roll the dough into 1 inch spheres.
- Line a Tupperware container with parchment paper and place the balls inside, leaving space between each.
- Cover and refrigerate for at least 30 minutes to firm up.
