Method
 

Step-by-Step Instructions
  1. In a large mixing bowl, combine the vanilla whey protein powder, rolled oats, poppy seeds, Truvia, and fresh lemon zest. Stir well.
  2. Pour in the lemon juice and mix. Gradually add cold water until the mixture forms a sticky dough.
  3. If the mixture is too dry, add more water one tablespoon at a time until the right consistency is achieved.
  4. Dampen your hands with cool water and roll the dough into 1 inch spheres.
  5. Line a Tupperware container with parchment paper and place the balls inside, leaving space between each.
  6. Cover and refrigerate for at least 30 minutes to firm up.
