Step-by-Step Instructions
  1. Soak the dried shiitake mushrooms in warm water for about 30 minutes or overnight to soften.
  2. Heat 1 tablespoon of vegetable oil in a wok or skillet and sauté minced ginger and diced carrots for 1 minute.
  3. Stir in diced shiitake mushrooms and bamboo shoots, cooking for an additional 2-3 minutes until tender.
  4. Add Shaoxing wine, light soy sauce, and vegetarian oyster sauce, cooking until liquid evaporates, about 2 minutes.
  5. Fold in chopped scallions and let the mixture cool to room temperature.
  6. Blanch cilantro stems in boiling water for 5-10 seconds, then transfer to an ice bath.
  7. Roll out dumpling wrappers to 4 inches in diameter and place 1 tablespoon of cooled filling in the center.
  8. Pinch the edges of the wrapper to form a 'money bag' shape, securing with a blanched cilantro stem.
  9. Steam the dumplings in a bamboo steamer lined with parchment paper for about 3 minutes.
