Preparation
- Preheat your oven to 350°F (175°C) and grease a loaf pan.
- In a large mixing bowl, cream together 1 cup of softened butter and 1 cup of white sugar until light and fluffy.
- Add 2 whole eggs one at a time, mixing well after each addition.
- Fold in 4 mashed bananas, 1 cup of sour cream, and 1 teaspoon of vanilla extract until just combined.
- In a separate bowl, whisk together 2.5 cups of flour, 2 teaspoons of baking soda, 1 teaspoon of cinnamon, and 0.5 teaspoon of salt. Gradually mix into the wet ingredients.
- Fold in 1 cup of chopped walnuts or chocolate chips if desired.
- Pour the batter into the greased loaf pan and smooth the top.
- Bake for 60 to 70 minutes, until a toothpick comes out clean.
- Let cool in the pan for 10 minutes before transferring to a wire rack.
