  • 1 large Egg
  • 1/4 cup Vegetable Oil Can be swapped for melted butter
  • 1 teaspoon Vanilla Extract
  • 1/2 teaspoon Salt
For the Cream Cheese Filling
  • 8 ounces Cream Cheese Softened
  • 1/4 cup Granulated Sugar
  • 1 tablespoon Cornstarch
  • 1 teaspoon Vanilla Extract
For the Streusel Topping
  • 1/2 cup All-Purpose Flour
  • 1/4 cup Sugar
  • 1/4 cup Unsalted Butter Melted
  • a pinch Salt

Step‑by‑Step Instructions
  1. Prepare the Streusel Topping by combining flour, sugar, and salt. Drizzle in melted butter and mix until crumbly.
  2. Make the Cream Cheese Filling by beating cream cheese, sugar, cornstarch, and vanilla until smooth.
  3. Combine the Dry Ingredients: whisk together flour, baking powder, and salt in a large bowl.
  4. Mix the Wet Ingredients: whisk egg, brown sugar, yogurt, oil, and vanilla until smooth.
  5. Combine Batter and Berries by folding wet into dry, then gently fold in berries.
  6. Preheat the oven to 350°F (175°C), and assemble the muffins in the tin.
  7. Add the Streusel Topping by sprinkling it over the muffins before baking.
  8. Bake the muffins for 30-35 minutes until golden brown and a toothpick comes out clean.
  9. Cool the muffins in the pan for 5-10 minutes before serving. Optionally glaze with a sugar and milk mixture.
