  • 1 can Chickpeas drained and rinsed
  • 1 medium Bell Pepper finely diced
  • 2 stalks Green Onions chopped
  • 1/2 cup Sun-Dried Tomatoes minced
  • 1/4 cup Olives chopped
  • 2 tablespoons Dates minced
  • 2 tablespoons Herbs (Parsley & Mint) chopped
For the Dressing
  • 3 tablespoons Tahini
  • 2 tablespoons Lemon Juice freshly squeezed
For the Bread
  • 4 slices Bread any sandwich bread

Method
 

Preparation Steps
  1. Finely dice the bell pepper, chop the green onions, mince the sun-dried tomatoes and dates, and roughly chop the parsley and mint.
  2. Toast the bread slices in a toaster or on a skillet over medium heat until golden and crisp, about 3-4 minutes.
  3. Drain and rinse the chickpeas, then mash them lightly in a mixing bowl until mostly chunky.
  4. Combine the spices in a small bowl, then sprinkle over the mashed chickpeas and fold to incorporate.
  5. Fold in the prepared vegetables and season with salt. Add the chopped herbs last.
  6. Whisk together tahini, lemon juice, and a splash of hot water until smooth, then pour over the chickpea mixture.
  7. Spread the chickpea mixture onto the toasted bread slices, adding fresh greens if desired.
