- Finely dice the bell pepper, chop the green onions, mince the sun-dried tomatoes and dates, and roughly chop the parsley and mint.
- Toast the bread slices in a toaster or on a skillet over medium heat until golden and crisp, about 3-4 minutes.
- Drain and rinse the chickpeas, then mash them lightly in a mixing bowl until mostly chunky.
- Combine the spices in a small bowl, then sprinkle over the mashed chickpeas and fold to incorporate.
- Fold in the prepared vegetables and season with salt. Add the chopped herbs last.
- Whisk together tahini, lemon juice, and a splash of hot water until smooth, then pour over the chickpea mixture.
- Spread the chickpea mixture onto the toasted bread slices, adding fresh greens if desired.
