Ingredients
  

For the Stir Fry
  • 1 pound Chicken breasts Cut into bite-sized pieces
  • 2 tablespoons Extra virgin olive oil Use for cooking and finishing
  • 1 medium Zucchini Slice into half-moons
  • 1 medium Red bell pepper Diced into chunks
  • 1 medium Red onion Sliced into strips
  • 1 cup Cherry tomatoes Halved
  • 1/2 cup Kalamata olives Pitted and halved
  • 3 cloves Garlic Minced
  • 1/4 cup Sun-dried tomatoes Chopped
For Seasoning
  • 1 teaspoon Dried oregano
  • 1 teaspoon Dried basil
  • 1 teaspoon Dried thyme
  • 2 tablespoons Lemon juice Freshly squeezed
  • 1/2 cup Feta cheese Crumble on top before serving
  • 2 tablespoons Fresh parsley Optional garnish

Method
 

Step-by-Step Instructions
  1. Prep all your ingredients: chop the chicken, slice the zucchini, dice the red bell peppers, halve the cherry tomatoes, and slice the red onion. Mince the garlic and chop the sun-dried tomatoes.
  2. In a large skillet, heat 2 tablespoons of olive oil over medium-high heat. Add chicken pieces in a single layer and sear for 5-7 minutes until golden brown.
  3. Remove the cooked chicken and set aside. In the same skillet, add an additional tablespoon of olive oil, and lower the heat. Sauté the red onion and minced garlic for 1-2 minutes.
  4. Add zucchini and red bell peppers, cooking for 3-4 minutes until tender. Return cooked chicken and add cherry tomatoes, olives, and sun-dried tomatoes.
  5. Season with oregano, basil, and thyme. Drizzle lemon juice, crumble feta cheese on top and let it rest for a minute before serving.
