- Prep all your ingredients: chop the chicken, slice the zucchini, dice the red bell peppers, halve the cherry tomatoes, and slice the red onion. Mince the garlic and chop the sun-dried tomatoes.
- In a large skillet, heat 2 tablespoons of olive oil over medium-high heat. Add chicken pieces in a single layer and sear for 5-7 minutes until golden brown.
- Remove the cooked chicken and set aside. In the same skillet, add an additional tablespoon of olive oil, and lower the heat. Sauté the red onion and minced garlic for 1-2 minutes.
- Add zucchini and red bell peppers, cooking for 3-4 minutes until tender. Return cooked chicken and add cherry tomatoes, olives, and sun-dried tomatoes.
- Season with oregano, basil, and thyme. Drizzle lemon juice, crumble feta cheese on top and let it rest for a minute before serving.
