Ingredients
  

For the Meatballs
  • 1 pound Ground Pork Substitute with ground chicken or turkey if desired.
  • 2 tablespoons Jerk Seasoning Opt for a homemade blend if you can’t find a store-bought one.
  • 2 cloves Garlic Minced; fresh is best.
  • 3 stalks Scallions Chopped; can substitute with chives.
  • 1 tablespoon Ginger Freshly grated preferred.
For the Coconut Curry Sauce
  • 1 can Coconut Milk Shake well before using.
  • 2 tablespoons Jamaican Curry Powder Substitute with another curry if Jamaican isn’t available.
  • 1 tablespoon Brown Sugar Can be omitted for lower sugar content.
  • 1 teaspoon Salt Adjust to your personal taste.

Method
 

Preparation
  1. In a large mixing bowl, combine the ground pork with jerk seasoning, scallions, minced garlic, freshly grated ginger, and salt. Mix until thoroughly combined.
  2. Shape into meatballs of your preferred size, about 1 to 1.5 inches in diameter.
  3. Heat a tablespoon of oil in a large skillet over medium heat. Add the formed meatballs carefully and cook for about 6-8 minutes until golden brown.
  4. Remove the meatballs and pour in coconut milk and Jamaican curry powder into the skillet. Stir well and let it simmer for 2-3 minutes.
  5. Return the browned meatballs to the skillet and simmer together for an additional 5 minutes.
  6. Serve hot with jasmine rice or steamed vegetables.
