- In a large mixing bowl, combine the ground pork with jerk seasoning, scallions, minced garlic, freshly grated ginger, and salt. Mix until thoroughly combined.
- Shape into meatballs of your preferred size, about 1 to 1.5 inches in diameter.
- Heat a tablespoon of oil in a large skillet over medium heat. Add the formed meatballs carefully and cook for about 6-8 minutes until golden brown.
- Remove the meatballs and pour in coconut milk and Jamaican curry powder into the skillet. Stir well and let it simmer for 2-3 minutes.
- Return the browned meatballs to the skillet and simmer together for an additional 5 minutes.
- Serve hot with jasmine rice or steamed vegetables.
