Step-by-Step Instructions
  1. Dissolve 1 tablespoon of white sugar in ½ cup of hot water. Whisk in fish sauce, lime juice, minced garlic, and sliced red chilies.
  2. Dice the ripe mango, slice the cucumber thinly, and chop the red onion. Optionally, soak the onion in ice water for 10 minutes. Halve the cherry tomatoes.
  3. In a mixing bowl, combine diced mango, cucumber, red onion, cherry tomatoes, and spring onions. Toss together.
  4. Pour the prepared dressing over the salad and mix gently until well coated.
  5. Cover the bowl and refrigerate for at least 1 hour to enhance flavors before serving.
