- Preheat your oven to 375°F (190°C) and coat a 9x13 inch baking dish with nonstick spray.
- In a skillet, heat olive oil over medium heat, adding minced garlic and sautéing for 1-2 minutes.
- Add sliced mushrooms and zucchini, cooking for 5-7 minutes until softened, then stir in spinach until wilted.
- In a medium bowl, mix ricotta cheese with half the grated Parmesan, salt, and pepper until smooth.
- Layer a thin layer of Alfredo sauce in the baking dish, then layer noodles, half the ricotta mixture, and half the veggies. Repeat.
- Spread remaining Alfredo sauce on top, then sprinkle mozzarella and remaining Parmesan.
- Cover with aluminum foil and bake for 35 minutes, then remove foil and bake for an additional 10 minutes.
- Let the lasagna rest for 10 minutes before slicing and serving.
