For the Chicken
  • 4 pieces Chicken breasts, thighs, or wings
  • 2 tablespoons Olive Oil
  • 1/4 cup Lime Juice freshly squeezed
  • 1 tablespoon Chili Powder
  • 1 tablespoon Brown Sugar or coconut sugar
  • 1 teaspoon Salt
  • 1 teaspoon Cumin
  • 1 teaspoon Smoked Paprika
  • 1 teaspoon Onion Powder
  • 1/2 teaspoon Chipotle Chili Powder optional
For the Salsa
  • 2 medium Avocados ripe yet firm
  • 1 cup Cherry Tomatoes or Roma Tomatoes
  • 1 cup Fresh Corn or canned corn
  • 1/2 medium Red Onion
  • 1 medium Red Bell Pepper or green pepper
  • 1 medium Jalapeño Pepper optional
  • 1/4 cup Cilantro or parsley
  • 1 clove Garlic minced
  • 1 tablespoon Extra Lime Juice

Method
 

Preparation
  1. In a medium bowl, whisk together olive oil, lime juice, chili powder, brown sugar, salt, cumin, smoked paprika, onion powder, and chipotle chili powder until smooth.
  2. Take the chicken and coat them thoroughly with the wet rub. Marinate for 15 to 30 minutes.
  3. Preheat the grill or skillet to medium-high heat.
  4. Cook each piece of chicken for 5 to 7 minutes on one side, then flip and cook for another 5 to 7 minutes until fully cooked.
  5. While the chicken cooks, chop avocados, cherry tomatoes, red onion, bell pepper, jalapeño, and cilantro; mix in a bowl with lime juice.
  6. Rest the chicken for 5 minutes before slicing.
  7. Serve the chicken warm with the Avocado Corn Salsa.
