- In a food processor or blender, combine oil, soy sauce, brown sugar, lemon juice, garlic cloves, fresh ginger, red chilli, and lemongrass. Blend until smooth to create a fragrant marinade.
- Place the chicken wings in a large mixing bowl, pour the marinade over them, and toss to coat. Cover and marinate in the fridge for at least 30 minutes, or overnight.
- Preheat your air fryer to 200°C (390°F) and lightly spray the basket with cooking oil.
- Arrange the marinated chicken wings in a single layer in the air fryer basket. Cook at 200°C (390°F) for 15-20 minutes, flipping halfway through until golden brown.
- While cooking, toast the peanuts in a small pan over medium heat for about 3-5 minutes until golden.
- Once the wings are crispy, serve on a platter topped with toasted peanuts, sliced spring onions, and extra red chilli.
