Method

Step-by-Step Instructions
  1. Start by adding 2 cups of Fairlife milk, 1 scoop of lemon protein powder, 1/4 cup of fresh lemon juice, 1 tablespoon of lemon zest, 1 tablespoon of sugar-free pudding mix (if using), your choice of sweetener, and a pinch of salt into a high-speed blender. Blend on high for 30 to 60 seconds until completely smooth.
  2. Once smooth, pour the mixture into a freezer-safe pint container. Tap the container on the counter to remove air bubbles. Leave some space at the top as the ice cream will expand when frozen.
  3. Place the container in the freezer and chill for 2 to 3 hours. For a scoopable texture, aim for 2 hours; for a firmer consistency, extend to 3 to 4 hours.
  4. When ready to enjoy, let it sit at room temperature for about 10 to 15 minutes if frozen solid. Scoop servings of your lemon protein ice cream into bowls or cones.
