- In a small saucepan, combine honey and ½ cup of water over low heat. Stir continuously for about 3–5 minutes, or until the honey completely dissolves into a smooth syrup. Remove from heat and let it cool at room temperature.
- Squeeze enough fresh lemons to yield 1 cup of lemon juice, then strain the juice to remove any pulp.
- In a large pitcher, mix the cooled honey mixture with fresh lemon juice and 1 cup of cranberry juice. Stir gently until all ingredients are thoroughly blended.
- Just before serving, gradually stir in 4 cups of chilled sparkling water.
- Fill glasses with ice cubes. Pour the fizzing mixture over the ice.
- Garnish each glass with a slice of lemon and a few fresh mint leaves.

Store any leftover Lemon Pink Soda in an airtight container in the refrigerator for up to 2 days. For long-term storage, freeze the soda base (without sparkling water) in ice cube trays for up to 2 months.
