Step-by-Step Instructions
  1. Prep Blueberry Jam: Combine fresh blueberries and sugar in a saucepan over medium heat. Simmer for 10-15 minutes until thickened. Cool before use.
  2. Make Filling: Beat cream cheese, sugar, and vanilla in a bowl until smooth. Refrigerate for 15-20 minutes.
  3. Prepare Dough: Whisk flour, baking powder, and salt. Cream butter, sugar, and lemon zest. Add egg and mix in dry ingredients.
  4. Chill Dough: Wrap in plastic and refrigerate for 30 minutes. Preheat oven to 350°F (175°C).
  5. Assemble Cookies: Roll dough into balls, create an indentation, fill with cheesecake filling and blueberry jam, then seal.
  6. Bake: Place on parchment-lined sheet. Bake for 12-15 minutes until edges are golden.
