  • 2 cups Freshly Squeezed Pink Grapefruit Juice About 4 grapefruits are needed for the juice.
  • 1 cup Water Can be substituted with flavored tea.
  • 1 cup Organic Cane Sugar Light-colored sugar is recommended.
For the Infusion
  • 2 bags Jasmine Tea Bags Other floral teas can be substituted.
  • 1 pinch Sea Salt Can be omitted if preferred.
Optional Ingredient
  • 1 tbsp Vodka Helps reduce ice crystal formation.

Equipment

  • Ice Cream Maker
  • food processor
  • measuring cups
  • small pot

Method

Step-by-Step Instructions
  1. Prepare the Jasmine Tea: In a small pot, bring 1 cup of water to a gentle simmer, then add the jasmine tea bags. Let them steep for about 5 minutes without boiling. Remove from heat and dissolve the organic cane sugar and a pinch of sea salt into the tea, stirring until fully dissolved.
  2. Juice the Grapefruits: Juice the grapefruits to yield about 2 cups of juice. Strain to remove pulp or seeds, then combine with the cooled tea mixture, adding vodka if desired.
  3. Chill the Mixture: Cover and refrigerate the mixture for 1-2 hours to meld the flavors and chill thoroughly.
  4. Churn in an Ice Cream Maker: Pour the mixture into an ice cream maker and churn for 20-30 minutes until it thickens.
  5. No Ice Cream Maker Method: Pour the chilled mixture into ice cube trays and freeze overnight. Blend frozen cubes in a food processor until smooth.
  6. Final Touch and Serve: Serve the sorbet in chilled bowls, garnished with grapefruit segments or fresh mint.
