- In a medium bowl, whisk together buttermilk, egg, and Cajun seasoning until well combined. Submerge the chicken in the mixture, cover, and marinate in the refrigerator for at least 1 hour.
- In a large mixing bowl, combine flour, remaining Cajun seasoning, cornstarch, and baking powder; whisk to blend. Dredge each piece of marinated chicken thoroughly in the flour mixture.
- Heat vegetable or peanut oil in a heavy-bottomed pot to 350°F (180°C). Add the coated chicken pieces to the oil, frying for 4-5 minutes on each side or until golden brown and crispy.
- Lightly toast the buns. Spread mayonnaise on each bun and place a piece of crispy fried chicken on the bottom half. Drizzle jalapeño honey over the chicken, then top with the other half of the bun.
