Method
 

Step-by-Step Instructions
  1. Start by creaming butter with sugar until light and fluffy. Beat in egg and vanilla extract until well combined.
  2. Sift in flour and salt, mixing until a soft dough forms. Chill for at least 1 hour.
  3. Preheat your oven to 160°C (320°F fan). Preparing in advance allows even baking.
  4. Cut out shapes using a heart-shaped cookie cutter and arrange on lined baking trays. Bake for 8-10 minutes.
  5. Cook raspberries over medium heat to make a reduction. Strain to remove seeds and whip double cream with icing sugar.
  6. Fold raspberry reduction into whipped cream to create filling.
  7. Spread filling between two cookies to create sandwiches. Chill for at least 1 hour.
  8. Melt chocolate and dip half of each sandwich, then sprinkle with freeze-dried raspberries or sprinkles.
  9. Allow to set at room temperature or in the fridge before serving.
