Cooking Instructions
- Preheat your oven to 375°F (190°C).
- Pat the chicken thighs dry with paper towels and season with salt and black pepper.
- In a skillet, heat olive oil over medium-high heat and sear the chicken thighs skin-side down for 6-8 minutes.
- Flip the chicken and cook for an additional 2-3 minutes.
- Reduce heat to medium, melt unsalted butter, add onion and sauté until translucent, add garlic and sauté until fragrant.
- Pour in white wine, scrape the bottom of the skillet, and simmer until reduced by half.
- Slowly stir in chicken broth, thyme leaves, and bay leaf; bring to a simmer.
- Nestle chicken thighs back into the skillet and bake for 20-25 minutes until internal temperature reaches 165°F (74°C).
- Remove bay leaf, let chicken rest for 5 minutes, and stir in cream if desired before serving.
