Ingredients
  

For the Chicken
  • 4 pieces Bone-in, Skin-on Chicken Thighs
  • 2 tablespoons Olive Oil For searing
  • 2 tablespoons Unsalted Butter Can substitute with olive oil
For the Aromatics
  • 1 teaspoon Salt
  • 1 teaspoon Black Pepper
  • 1 medium Yellow Onion Chopped
  • 4 cloves Fresh Garlic Minced
For the Sauce
  • 1 cup Dry White Wine Sauvignon Blanc or Pinot Grigio recommended
  • 1 cup Chicken Broth Low-sodium preferred
  • 6 sprigs Fresh Thyme Or half the amount if dried
  • 1 leaf Bay Leaf Discard before serving
Optional Additions
  • 1/2 cup Heavy Cream Optional for creamier sauce
  • Mushrooms or Seasonal Vegetables Customize to your liking

Method
 

Cooking Instructions
  1. Preheat your oven to 375°F (190°C).
  2. Pat the chicken thighs dry with paper towels and season with salt and black pepper.
  3. In a skillet, heat olive oil over medium-high heat and sear the chicken thighs skin-side down for 6-8 minutes.
  4. Flip the chicken and cook for an additional 2-3 minutes.
  5. Reduce heat to medium, melt unsalted butter, add onion and sauté until translucent, add garlic and sauté until fragrant.
  6. Pour in white wine, scrape the bottom of the skillet, and simmer until reduced by half.
  7. Slowly stir in chicken broth, thyme leaves, and bay leaf; bring to a simmer.
  8. Nestle chicken thighs back into the skillet and bake for 20-25 minutes until internal temperature reaches 165°F (74°C).
  9. Remove bay leaf, let chicken rest for 5 minutes, and stir in cream if desired before serving.
