  • 1/2 cup unsalted butter Create a rich, flaky pastry.
  • 1/4 cup powdered sugar Sifting helps avoid lumps.
Optional Egg Wash
  • 1 large egg Mixed with 1 tbsp water for a golden finish.
  • 1 tbsp water

Method
 

Step-by-Step Instructions
  1. Preheat your oven to 355°F (180°C) and grease the mini muffin tins with butter.
  2. Sift together plain flour and powdered sugar in a bowl, then fold in wholemeal flour.
  3. Rub the cold cubed unsalted butter into the flour mixture until it resembles coarse breadcrumbs.
  4. Gradually add cold water, mixing gently until the dough comes together.
  5. Roll out the dough to about ½ cm thick and cut circles for the muffin cups.
  6. Place the dough in the muffin tins, fill with fruit mince, and top with star shapes.
  7. Brush the tops of the tarts with the egg wash for shine.
  8. Bake for 10-15 minutes until golden brown and cool in the tin for a few minutes.
  9. Transfer to a wire rack to cool completely before serving.
