- Preheat your oven to 355°F (180°C) and grease the mini muffin tins with butter.
- Sift together plain flour and powdered sugar in a bowl, then fold in wholemeal flour.
- Rub the cold cubed unsalted butter into the flour mixture until it resembles coarse breadcrumbs.
- Gradually add cold water, mixing gently until the dough comes together.
- Roll out the dough to about ½ cm thick and cut circles for the muffin cups.
- Place the dough in the muffin tins, fill with fruit mince, and top with star shapes.
- Brush the tops of the tarts with the egg wash for shine.
- Bake for 10-15 minutes until golden brown and cool in the tin for a few minutes.
- Transfer to a wire rack to cool completely before serving.
